It is fully clad tri-ply, with aluminum running up the sides as well as the base, so heat spreads evenly. If you want the original and can spend more, the All-Clad D3 10-Piece is the tri-ply set chefs grew up on, made in Pennsylvania and oven safe to 600°F. The Made In 10-Piece goes further with 5-ply construction made in Italy. Quick tips before you buy

Preheat, then add fat

Heat the empty pan over medium for a minute or two, then add oil. Food sticks far less in a properly hot pan.

Clad beats a disc base

Fully clad pans have aluminum up the sides, so sauces heat evenly. Disc-base sets heat mainly at the bottom.

Deglaze stuck bits

Brown bits on the bottom are flavor. Pour in a splash of water or wine while the pan is hot and scrape them up.

Check induction support

For most home cooks, no. Both are fully clad tri-ply, induction ready and oven safe. All-Clad is made in the USA, rated to 600°F and has a more polished finish, but Tramontina gives you very similar cooking for about a third of the price and is dishwasher safe.

What does tri-ply or 5-ply mean?+

It is the number of bonded metal layers. Tri-ply has an aluminum core between two layers of stainless steel. 5-ply adds more layers for more even heat and heat retention, but the pans are heavier and cost more.

Why does food stick to stainless steel pans?+

Usually because the pan wasn’t hot enough or there wasn’t enough fat. Preheat the pan, add oil, let it shimmer, then add food and don’t move it until it releases on its own.

Can stainless steel cookware go in the dishwasher?+

Tramontina, Cuisinart and Calphalon say yes. All-Clad recommends hand washing to keep the polished finish. Hand washing with a little Bar Keepers Friend keeps any stainless pan looking new.

Is stainless steel cookware safer than nonstick?+

Stainless has no coating to scratch or wear off, which is why many people choose it to avoid PFAS-type coatings. It is also oven safe at higher temperatures and lasts much longer than nonstick.
